ANNATO SHRIMP TOWER ON AVOCADO AND WHITE RICE

 Ingredients:
  • Shrimps 8 shrimps
  • Annatto 25grs
  • Orange juice ½ cup
  • Rice 1 cup
  • Water 2 1/2 cups
  • Butter 2 soupspoons
  • Sliced onion ¼ onion
  • Avocado 2 avocados
  • Olive oil 2 soupspoons
  • Salt to taste

 Preparation:

Boil 2 ½ cups of water. Once it begins boiling, add the previously washed rice and sliced onion together with butter. Once it starts boiling again, cover and let cook on low heat for 25 minutes. Turn off heat and let stand at least for 10 further minutes. Meanwhile, prepare the annatto, mixing it with orange juice and pickle peeled shrimp therein. Once shrimp have been pickled in the mix, cook in a skillet with a bit of oil. Serve, forming an avocado ring; pile the rice over it, and finally, the shrimp, which should lie firmly thereon.
