Boil water and cook shrimp in batches to achieve uniform cooking. Once shrimp are ready, place in a bowl containing water and ice. Drain and dry. Peel shrimp and leave tail on; make a cut on their backs, so they can stand upright. Cut thin avocado strips with a potato peeler and form a carpet on a plate. Place standing shrimp on avocado carpet and accompany with ketchup and limes. |
