For the dressing, mix the vinegar, salt, pepper and mustard powder in a bowl and beat with four tablespoons of oil until forming an emulsion. Drain the lettuce, cut orange and grapefruit supremes, that is, slices without peel and white skin; cut mango into small cubes. Add a bit of grated orange peel to dressing. Mix fruit and lettuce. In a skillet, add the rest of the oil and cook shrimp slightly; season with pepper. Distribute lettuce on plates and place fruit and shrimp on top. Cover with dressing. |
